Intro to Domaine du Pre Baron Touraine Sauvignon – Domaine du Pre Baron Touraine Sauvignon is a rich, single estate old vine Loire Sauvignon Blanc from a warm vintage, showing notes of exotic tropical fruits. Full tasting note and wine making – Domaine du Pre Baron Touraine Avignon has aromas that are heady, earthy and herbaceous. The wine has significant palate weight, almost New World in style, very rounded with a rich texture and long finish. Hand-picked, carefully selected estate fruit from the best parcels of old vines, 30-35 years old, grown on gentle south-facing slopes with sandy gravel soils. 20-25% of the harvest will be macerated on the skins, depending on the characteristics of the vintage. This is followed a slow fermentation at 18°C for three weeks in stainless steel vats. There is no malolactic fermentation. Wines are matured on their fine lees until bottling in the following spring. The producer – Jean-Luc Mardon is the 5th generation of his family to run this 45 hectare domaine in Oisly, Touraine. He has been at the helm for 20 years, and it was his father, Guy, who first started working with Boutinot back in the 1980s. He is a quiet, fastidious winemaker which shows in the quality of his wines. Jean-Luc Mardon’s estate is certified by Terra Vitis, which is a rigorous code of conduct for sustainable winemaking covering all aspects of production from vine to bottle.
