Full tasting note and wine making – Domaine Garnier Chablis from France is a traditional Chablis which has floral aromas which lead on to rich, rounded fruit and a fine mineral finish. Simply fabulous Chablis. The vineyards are family owned in the small village of Ligny le Chatel the most northerly part of the Chablis appellation and thus have a very fresh thread of persistent acidity to balance the rounded fruit from the long natural fermentation which in some years can take five months. The aromas are very fragrant with a youthful acidity balanced by a hint of honey. The producer – Domaine Garnier Chablis is a family domaine now managed by brothers Xavier in the vineyards and Jerome Garnier in the winery who pride themselves on using production methods that respect the environment. The winery is based in Ligny le Chatel near to their twenty four hectares of vineyards in the northern part of Chablis. The soil here is a mixture of stony chalk with a little marl so the wines have much obvious minerality and rounded notes on the palate. The vineyards were first planted in 1985 and the first vintage made solely by the brothers was in 1992. Drink with – This wine is best served chilled and can be enjoyed as a fabulous aperitif or with salmon and chicken dishes. Also available in a magnum – great presentation when served from a magnum too! Producer website – www.chablis-garnier.com
